Healthy Pumpkin Cookies

'Tis the season for all things pumpkin! As many of you know, I am an avid pumpkin lover and my all time favorite Pumpkin Spice candle was the inspiration for starting Maxwell Rowe in 2020. After learning how toxic traditional pumpkin candles and pumpkin treats are, I have been on an ongoing quest to create the PERFECT Pumpkin Spice candle - and I'm thrilled to share we now have TWO options for my fellow pumpkin lovers!

What about pumpkin treats? I'm so excited to share my minimal ingredient pumpkin cookie recipe with you! These cookies are soft, chewy & packed with flavor. Initially these were 3 ingredient cookies but I've decided to add chocolate chips and pumpkin pie spice for the most delicious holiday treat! I can't wait to hear how you all like them!

Healthy Pumpkin Cookies 

Ingredients

2 1/2 cups rolled oats

2 cups canned pumpkin

1/4 cup organic maple syrup

Optional: chocolate chips and pumpkin pie spice- add to taste.

Instructions:

Preheat oven to 350 and line a baking sheet with parchment paper. In a bowl, mix oats, pumpkin, maple syrup and pumpkin pie spice (optional). Once mixed, if using chocolate chips, fold into cookie mixture. Using a steel cookie scoop, form into small balls and place on cookie sheet. Bake for 12 minutes and allow to cool. 

Pro tip- store in fridge and enjoy cold with a delicious cup of coffee or matcha.
